Ingredients

  • 125g cooked quinoa
  • 1 tbsp toasted nuts, such as pine nuts, cashews or flaked almonds
  • 1 tbsp seeds
  • ½ pomegranate, seeds removed to add
  • Handful of leaves or raw vegetables, such as baby spinach or grated carrot
  • Juice of ½ lime
  • 1 tbsp extra virgin olive oil
  • Handful of fresh mint, roughly chopped
  • A pinch of sea salt
  • 1 tbsp natural yogurt
  • 25 g blue cheese
  • A small handful of blueberries

Instructions

  1. Place all of the ingredients in a serving bowl and mix well.
