DIRECTIONS

Cut the chicken breasts in strips the size of goujons.

Mix all the ingredients for the spice mix together in a bowl.

Whisk the egg and buttermilk together in a bowl.

To coat the chicken dip each piece into the buttermilk and egg mix then into the flour and spice mix ensuring the chicken is coated. Place on a wire rack until you have completed this process for all the chicken.

Heat the oil in a small deep fat fryer to 170°C and when hot fry the chicken pieces until golden in colour. Transfer to oven able tray and place in oven at 160°C for 7-8 minutes until chicken is cooked.

For the dip mix the zest of a lemon, minced garlic with crème fraiche and serve the dip with the crispy chicken.
