Heat pan on stovetop and spread butter on one side of each slice of bread.

Place one slice of bread on heated pan, buttered side down.

Stack sliced cheese on bread and place another slice of bread on top, buttered side up.

Grill until cheese is melted and bread is crispy.

Flip toastie to grill other slice of bread.

Once both sides of toastie are golden brown and cheese is melted, remove from pan and slice diagonally.

Serve and enjoy with homemade tomato soup.

In a pot, melt butter and sautée onion and garlic.

Add chopped tomatoes until soft.

Pour in vegetable stock and let simmer.

Season with salt and pepper.

Blend until smooth, and return to heat.
