Heat the oil and butter over medium heat in a large heavy-bottom saucepan and fry the onions for 30 minutes until golden brown and caramelised. Stir occasionally to prevent the onions from burning.

Sprinkle in the flour and thyme and mix thoroughly with the onions, Then, stir in the chicken stock and bring to a boil. Reduce heat to medium-low and cook for 5 minutes before pouring in cream. Season with salt, pepper and lemon juice and cook for 5 minutes.

Meanwhile, preheat a grill and toast the sourdough slices. When the soup is ready, ladle it into warm bowls, top with toasted sourdough, sprinkle with cheese, and place it under the hot grill until melted and bubbling. Sprinkle with parsley and serve immediately.
