DIRECTIONS

Arrange chopped lettuce onto serving plates and top with beetroot, scallions, sun-blush tomatoes and cherry tomatoes.

Crumble the cheddar on top.

Sprinkle with pomegranate seeds, toasted almonds and mixed seeds.

Drizzle with your chosen dressing before serving.
