In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes until the mixture is frothy, indicating that the yeast is active.

Add the flour, salt, and olive oil.

Mix until a soft dough forms. If the dough is too sticky, add a little more flour; if too dry, add a few more drops of milk.

Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat your oven to 245°C. If you have a pizza stone, place it in the oven to preheat as well; otherwise, a baking sheet will work.

Punch down the risen dough and turn it out onto a floured surface. Roll or stretch it into your desired pizza shape.

Spread a thin layer of tomato sauce over the prepared dough.

Sprinkle a generous amount of grated Irish Cheddar and other cheeses over the sauce.

Arrange slices of tomatoes, onions, mushrooms, and bell peppers on top.

Season with salt and pepper to taste.

Transfer the pizza to the preheated pizza stone or baking sheet.

Bake for about 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned.
