Bring a large pan of boiling salted water to a boil and cook the macaroni according to the packet instructions until al dente.

Meanwhile, melt the butter in a large saucepan and stir in the flour; cook for a minute over medium-low heat to make a paste.

Gradually pour in the milk, stirring continuously. Bring to a boil, reduce the heat and simmer for 2 minutes. You may need to whisk the sauce to remove any lumps. Take the saucepan off the heat and stir in 3/4 of the grated cheese until it melts and the sauce is smooth—season with salt and pepper.

Preheat a grill to medium. Drain the macaroni, tip it into the cheese sauce and stir to coat the pasta evenly. Tip the macaroni cheese into a serving dish, sprinkle the remaining cheese, and place it under a hot grill for 5 - 10 minutes until golden. Serve immediately with bowls of Christmas leftovers, tomatoes, scallions, and hot sauce.
